INGREDIENTS
- 2 pkgs. frozen chopped spinach
- 2 cups cottage cheese, blended
- 4 eggs, beaten
- 2 t. salt
- ½ t. pepper
- dash of nutmeg
- ¼ cup grated Parmesan cheese
- 1 T. butter
- paprika
- Cook spinach and drain well.
- With hand mixer, blend the cottage cheese and eggs together.
- Add next ingredients and place in pie plate.
- Dot with butter, sprinkle with additional grated cheese and paprika.
- Bake at 350° F for 20 minutes.
- Cool slightly and cut in wedges.
