Spinach Pie

INGREDIENTS    
  • 2 pkgs. frozen chopped spinach
  • 2 cups cottage cheese, blended
  • 4 eggs, beaten
  • 2 t. salt
  • ½ t. pepper
  • dash of nutmeg
  • ¼ cup grated Parmesan cheese
  • 1 T. butter
  • paprika
DIRECTIONS  
  1. Cook spinach and drain well.
  2. With hand mixer, blend the cottage cheese and eggs together.
  3. Add next ingredients and place in pie plate.
  4. Dot with butter, sprinkle with additional grated cheese and paprika.
  5. Bake at 350° F for 20 minutes.
  6. Cool slightly and cut in wedges.
