Polpette di Artichoke

INGREDIENTS
  •  2 cans artichoke halves or bottoms, minced
  • 2 eggs
  • ½ cup grated cheese
  • ½ cup bread crumbs 
  • chopped parsley
  • 2 garlic clove, chopped
  • splash of water
  • pepper and salt to taste
DIRECTIONS
  1. Drain artichokes and squeeze to remove water.  Chopped until finely minced.
  2. Add all ingredients.  Make into small meatballs. Add water to form balls.
  3. Pan fry for a few minutes.
  4. Preheat oven to 375°F. Place in shallow baking dish coated with olive oil and cook for 20 minutes.
  5. Serve with marina sauce.
