Peanut Cole Slaw

INGREDIENTS   
  • cup roasted unsalted peanuts or almonds
  • 3 T. unseasoned rice vinegar
  • 1 T. soy sauce
  • 1 t. maple syrup
  • 1 t. white miso
  • 1 t. sesame oil
  • ¼ t. sea salt
  • pinch of chili flakes (optional)
  • ¼ cup water 
  • 1 small head green cabbage, finely shredded (about 6 cups)
  • 2 large carrots, grated  
DIRECTIONS 
  1. Prepare dressing by adding all ingredients except cabbage and carrots, in a small bowl.
  2. Place shredded cabbage and grated carrots in a large bowl, toss with prepared dressing.
  3. Cover and refrigerate for at least 1 hour.
  4. Will keep in the refrigerator for up to 4 days.
