- 2 cups egg whites
- 8 oz. Monterey jack cheese cut into cubes
- 1 cup low-fat cottage cheese
- ½ t. onion powder
- ½ t. garlic powder
- ½ t. kosher salt
- ½ t. black pepper
- ⅔ cup diced spinach
- 6 t. diced bell pepper
- warm water for water bath
DIRECTIONS:
- Preheat the oven to 325 °F.
- In a blender, combine all ingredients except spinach and bell pepper, blend until smooth.
- Pour the batter into paper cups (muffin tins) on a sheet pan.
- Add spinach and peppers and stir.
- Add 1" of water in sheet pan and place muffin tins in center of oven rack.
- Bake 20-30 minutes.
