- 1 t. Dijon mustard
- 4 fillets of skinless salmon
- 1 cup of frozen hash browns (not thawed)
- 1 T. flour
- salt and pepper
DIRECTIONS
- Spread the mustard over the salmon fillets
- Combine hash browns, flour, salt and pepper in a medium bowl.
- Sprinkle the hash brown mixture over the salmon, pressing to adhere.
- Heat olive oil in a non stick pan. Cook the salmon, potato side down, first until golden brown about 3 minutes per side.
