INGREDIENTS
- 4 chicken breasts
- 1/3 cup flour
- 1/4 cup cornstarch
- 1/2 t. salt
- 1/4 t. pepper
- 1/3 cup water
- 1 egg white
- 2 cups flaked coconut
- 2 cups oil
- Rinse chicken and pat dry. Cut into 2 inch strips.
- In a medium bowl, mix flour, cornstarch, salt and pepper.
- Stir in water and egg white.
- Spread coconut onto a large piece of wax paper.
- Dip chicken in batter, roll in coconut to coat evenly and let set for 15 minutes.
- Meanwhile, heat oil over medium high and add chicken and cook until golden brown. Drain on paper towels.
