No-Crust Spinach Quiche

INGREDIENTS  
  • 1 16 oz. carton small curd cottage cheese
  • 1 10 oz. pkg. frozen spinach, thawed
  • 1½ cup cubed sharp cheddar cheese
  • 3 eggs, beaten
  • ¼ cup butter, melted
  • 3 T. flour
  • 1 T. onion, minced
  • 1 T. lemon juice
  • 1 t. salt
DIRECTIONS  
  1. Mix ingredients thoroughly.
  2. Turn into buttered 9" quiche pan.
  3. Bake at 325°F 40 minutes.
