- 1 loaf French bread, cubed
- 1 clove garlic, crushed
- 4 hard boiled eggs, chopped fine
- 1 lb. cooked shrimp, chopped
- 1 cup finely chopped celery
- ½ cup minced green onions
- 2 t. chopped parsley
- 1 cup mayo
- ½ cup lemon juice
DIRECTIONS
- Cut bread into cubes about 1 inches in diameter.
- Place bread and garlic in a large bowl. Add eggs, onion, celery, parsley and shrimp.
- Mix together mayo and lemon juice, whisking well.
- Pour over ingredients and mix gently.
- Salt and pepper to taste.
- Serve on a roll.
