- 1 medium head of cauliflower, chopped
- 1½ T. butter
- 1½ T. flour
- 1½ cups milk
- ½ t. salt
- ground black pepper
- ¼ t. nutmeg
- 1½ t. Dijon mustard
- 2 oz. cream cheese, cut into small pieces
- 1½ t. Dijon mustard
- 1 cup shredded sharp cheddar, plus ½ cup for topping the casserole
- Cook the cauliflower in boiling salted water for 15 minutes.
- To prepare the sauce, heat the butter and stir in the flour. Add the milk gradually, stirring with a wire whisk. Simmer and stir in the salt, pepper and nutmeg. Add the cheese.
- Preheat oven to 350° F.
- Combine the cauliflower and cheese sauce and transfer to a oval baking dish. Sprinkle the surface with cheese. Cover with foil and bake in a 350° F oven for 10 minutes. Place under the broiler for 3 minutes to brown the surface.
