- 1 lb. shrimp, peeled
- 2 egg whites
- white bread, crust removed
- oil for deep frying
- 2 oz. white sesame seeds
- 1½ t. salt
- 2 t. corn starch
- 1 T. water
- Finely chop the shrimp and mix with salt, corn starch and water.
- Beat the egg whites to soft peaks and fold into the shrimp, mixing well.
- Spread thickly over the bread and coat with sesame seeds. Flatten topping.
- Deep fry the bread, shrimp side down for ½ minute. Turn and fry another ½ minute. Do not overcook.
- Cut up in triangle shapes and serve.
