- ¼ cup of flour
- 2 T. grated Parmesan cheese
- 1 t. salt
- ⅛ t. pepper
- 1½ lbs. veal (sliced thin and pounded)
- ½ cup dry white wine
- ½ cup consommé
- 1 T. lemon juice
- 2 cloves of garlic
- 4 T. olive oil
DIRECTIONS
- Mix the following together and sprinkle on veal: flour, Parmesan cheese, salt and pepper
- Heat 4 T. of olive oil and 2 cloves of garlic.
- Brown veal on both sides over low heat, for about 2 minutes.
- Add white wine, consommé and lemon juice.
- Cover and cook slowly for about 30 minutes.
