Veal Scaloppini

INGREDIENTS  
  

  • ¼ cup of flour
  • 2 T. grated Parmesan cheese
  • 1 t. salt
  • ⅛ t. pepper
  • 1½ lbs. veal (sliced thin and pounded)
  • ½ cup dry white wine
  • ½ cup consommé
  • 1 T. lemon juice
  • 2 cloves of garlic
  • 4 T. olive oil    

DIRECTIONS    

  1. Mix the following together and sprinkle on veal: flour, Parmesan cheese, salt and pepper
  2. Heat 4 T. of olive oil and 2 cloves of garlic.
  3. Brown veal on both sides over low heat, for about 2 minutes.
  4. Add white wine, consommé and lemon juice.
  5. Cover and cook slowly for about 30 minutes.
