Macaroon Kiss Cookies

INGREDIENTS  

  • 2½ cups all purpose flour
  • 1 T. plus 1 t. baking powder
  • 1/2 t. table salt
  • 2/3 cups butter, softened
  • 6 oz. cream cheese, softened
  • 1½ cups granulated sugar
  • 2 egg yolks
  • 1 T. plus 1 t. Vanilla extract
  • 1 T. plus 1 t. juice from a fresh orange
  • 10 cups sweetened flaked coconut, divided in to 6 cup and 4 cup portions
  • 1 bag Hershey Kisses (48 pieces)
DIRECTIONS  
  1. In a medium bowl, sift flour, baking powder and salt. Set aside.
  2. In the bowl of an electric mixer, beat the butter, cream cheese, and sugar until light and fluffy. Add egg yolks, vanilla and orange juice and beat till smooth.
  3. In 1 cup increments, mix flour in to the butter mixture. Add the 6 cups flaked coconut and beat to combine.
  4. Refrigerate dough for 1 hour. While dough is chilling, remove wrappers from the Kisses.
  5. Preheat oven to 350ºF. One at a time, scoop dough into 1.5" balls (about the size of a large walnut, roll between your palms, then roll in the bowl of remaining coconut (4 cups).
  6. Arrange on an ungreased baking sheet, at least an inch apart (cookies will spread slightly). Bake 12-14 minutes, until the cookies puff and are very lightly browned.
  7. Remove from oven. Immediately press one Kiss into each cookie. Return pan to oven and bake for an additional minute.
  8. Remove pan from oven and cool on a rack for 10 minutes. With a thin spatula, gently move cookies on to a rack to finish cooling.

Avocado Spinach Egg Salad

INGREDIENTS

  • 7 eggs, hard boiled
  • 4 oz. plain Greek yogurt
  • 2 avocados
  • 1 stalk celery, chopped
  • 1 cup of baby spinach, chopped
  • Buffalo Hot Sauce to taste
DIRECTIONS
  1. Once your eggs are cooled, peel them and mash them up with the Greek yogurt. Sprinkle some salt and pepper on top, too.
  2. Peel and pit your avocados and mash those up, too. Add a little salt and pepper to this, too, if you'd like.
  3. Combine the egg with the avocado.
  4. Mix in the cup of spinach and the celery.
  5. Add hot sauce to taste.

Ari's Chicken Tater Tot Casserole

INGREDIENTS  
  • 1 (32 oz.) bag Tater Tots Crispy Rounds
  • 1 large cooked rotisserie chicken, chopped
  • 2½ cups grated cheddar cheese
  • 6 T. Frank's Red Hot Buffalo Wing Sauce
  • ½ cup chopped onions
  • ¾ cup skim milk
  • salt and pepper
DIRECTIONS  
  1. Preheat oven to 350ºF.
  2. Mix all ingredients together and pour into greased 9x13 glass baking dish.
  3. Sprinkle with ½ cup of cheese. 
  4. Bake for 45 minutes to 1 hour.

Breaded Shrimp Salad

INGREDIENTS    
  • 1 loaf French bread, cubed
  • 1 clove garlic, crushed
  • 4 hard boiled eggs, chopped fine
  • 1 lb. cooked shrimp, chopped
  • 1 cup finely chopped celery
  • ½ cup minced green onions
  • 2 t. chopped parsley
  • 1 cup mayo
  • ½ cup lemon juice
DIRECTIONS    
  1. Cut bread into cubes about 1 inches in diameter.
  2. Place bread and garlic in a large bowl. Add eggs, onion, celery, parsley and shrimp.
  3. Mix together mayo and lemon juice, whisking well.
  4. Pour over ingredients and mix gently.
  5. Salt and pepper to taste.
  6. Serve on a roll.
