New Jersey Crumb Cake

CAKE INGREDIENTS   

  • 1⁄2 cup butter*
  • 1 cup sugar
  • 2 large eggs*
  • 3⁄4 cup milk*
  • 2 cups flour
  • 2 t. baking powder
  • 1 t. vanilla 

DIRECTIONS    

  1. In a mixer, cream butter and sugar together.
  2. In a separate bowl, beat eggs and milk and add to butter mixture.
  3. In another bowl, mix flour and baking powder, then add to butter mixture. Stir in vanilla.
  4. Pour batter into a greased 9x13 pan. 
TOPPING INGREDIENTS   
  • 1⁄2 cup butter*
  • 1 cup sugar
  • 2 cups biscuit mix or flour
  • 2 t. cinnamon
  • 1⁄4 - 1⁄2 cup powdered sugar

DIRECTIONS 

  1. Cut butter into sugar, biscuit mix, and cinnamon.
  2. Sprinkle over batter in pan.
  3. Bake at 350°F for 30 minutes or until done.
  4. Top with the 1⁄4 - 1⁄2 cup powdered sugar when cool.

*Vegan Crumb Cake: substitute vegan butter, 2 T. flax seed mixed with 5 T. water and let stand and unsweetened plant based milk.
